Food As Medicine in Action: Learn, Cook, and Transform Your Health

If you’ve ever wondered how to eat healthier without feeling overwhelmed, you’re not alone. The truth is, small, consistent changes in the kitchen can have a powerful impact on your health.

At the National University of Natural Medicine in Portland, the Food As Medicine Institute is helping people do exactly that through two unique programs: the Food as Medicine Everyday (FAME) Series and the Food as Medicine Symposium.

The FAME series is a three-month cooking and nutrition program designed for real life. Offered both in-person at the NUNM Helfgott facility in Portland, and online, FAME combines practical nutrition education with simple, plant-forward cooking. Participants learn how to balance blood sugar, read food labels, support digestion, and create nourishing meals using whole foods.

More than just a class, FAME is an experience. You’ll cook, learn, and share meals while building the confidence and skills to make meaningful changes at home. Whether you’re new to healthy eating or ready to go deeper, this program meets you where you are and helps you create habits that stick.

The Food As Medicine Symposium on May 2, 2026 expands this learning even further, with something for everyone. This event features both a clinical track for healthcare professionals and a public track for the community, making it a unique opportunity to explore the connection between food and health at any level.

Sessions will cover topics like gut health, sleep, menopause, autoimmune conditions, and heart health, all through a practical, nutrition-focused lens. Attend in person in Portland or join virtually from anywhere, with recordings available for all participants.

Together, these programs reflect a shared goal: making nutrition education accessible and practical. Because when you understand how to nourish your body, healthy choices become simpler and more sustainable, every day.

Join us in Portland or online and start building a healthier relationship with food.
